Delicious & Fresh Shrimp and Tomato Pasta

Here's another delicious recipe. It's very healthy, as most of the ingredients are natural, veggies and greens and protein. And of course, I posted more pictures! Actually, this time I have
step-by-step pictures.
Fresh Shrimp & Tomato Pasta

Ingredients:

  • 8 oz of dry angel hair pasta
  • 3 cloves garlic
  • 1/2 sweet onion, cut into wedges
  • oregano
  • 4 tbs. EVOO (extra virgin olive oil)
  • 4 medium tomatoes, chopped
  • basil
  • salt & pepper
  • 1 cup fresh spinach leaves
  • 1 lb cooked shrimp
  • 8 oz fresh mozerella cheese

Bring a large pot of lightly salted water to a boil. Add the pasta, and cook for 8 minutes, or until tender. Drain.
In the container of a food processor, combine the garlic, onion and oregano. Pulse until finely chopped. Heat the olive oil in a large skillet over medium heat. Add the onion mixture; cook and stir until fragrant and almost golden. Mix in the tomatoes, basil, salt and pepper. Simmer for about 5 minutes while the pasta is
cooking, stirring occasionally.
Mix in spinach until it wilts, then just before the pasta is done, stir in the shrimp. Cook until heated through. Toss with pasta in a large serving bowl, and mix in mozzarella cheese
.

serve with a garden fresh side salad!

lol. I know what you mean! I love his blog b/c it allows me to see what other people think of restaraunts before I go (obviously, he's in my area).

Luckily for me, both Taste of Asia and Main Kwong are right down the street from my office. I can walk there in 2 mins. I've ordered from MK several times, but for some reason, haven't tried ToA yet. But now, I can hardly wait for payday (the day I splurge on lunch)!
